Blue Cheese Bites

I've referred back to the "Friendship Feast" (see blog entry dated 11/24) a number of times, but today I'm here to share a recipe. This appetizer, courtesy of Laurie, was a hit at our feast. I made them for my family, then I learned after Thanksgiving that Michelle, Diane and Stacey had made them as well. These are easy, and require a few ingredients, but keep in mind that they take some time to assemble. The photos are followed by the actual recipe. Enjoy!

First, layer the phyllo dough with butter or cooking spray and cut into squares.
Then, put the squares into the mini muffin tins.

Now, fill the phyllo cups with the cream cheese, etc.

Here they are! So pretty and delicious too!
Blue Cheese Bites
1 8 oz. package cream cheese
1 package frozen phyllo dough (for shells)
8 oz. container glue cheese, crumbled
1 package dried cranberries
1 package candied pecans-chopped (directions to make your own candied pecans follow the recipe)

For shells: Follow directions on the phyllo dough package to make mini muffin shells. Bake, let cool. Filling: stir cream cheese in bowl until smooth. Spoon into phyllo shells. Top with blue cheese, a few cranberries, and nuts. Drizzle with honey. Makes about 50 appetizers.

Candied Pecans: To candy your own pecans, put 1/2 cup nuts into a skillet with 1 tablespoon and 1 teaspoon of sugar. Heat over medium-low heat until the sugar becomes a syrup. Stir the nuts until they are coated, them spread them over wax paper to cool.
